Guinea Fowl Roasted In Its Own Juices

1 Guinea fowl
½ c butter, softened
¼ c natural yogurt
½ c water
1 Tbs white wine or white vinegar
Salt and pepper


Preparation Time: 10 min

Cooking Time: 40 min

Pre-heat oven to 400 F

Add salt and pepper to yogurt, and place inside the Guinea fowl, truss the legs. Brush the skin of the Guinea fowl with ½ the butter.

Place the Guinea fowl in a dish that has been lightly greased, into a pre-heated oven.

Pour the water and the remaining butter over the Guinea fowl.

Cook for 30 min or until the Guinea fowl is cooked, basting frequently with the juices.

Serve with a green salad and potato wedges.
