Muscovy Duck Brisket

2 Muscovy Drake Breasts
3 Tbl Dark Molasses
1 tsp Asian Chile Paste
1 Tbl Ketchup
1/2 tsp dark coffee (ground)
3 Tbl Orange juice
1/4 tsp Paprika
salt and black pepper...a pinch each


This is great party dish. It is easy to prepare and cooked to well done for those who prefer their fowl fully cooked. Clean duck breast and score deeply so the cuts go into the fleah 1/8 inch. Place breast in shallow baking pan with 1/4 inch of melted duck fat. Whisk together all marinade ingredients and pour carefully over top so that the thick marinade gets into the scores of the breast meat. Roast in 325 oven for 1 1/2 hrs. Serve atop homemade biscuits and your favorite coleslaw w/ a touch of bbq sauce.
